<abstract displayLabel="Summary">L'influence de travail au froid sur la santé des salariés est mal connue. Aussi, cette note a pour but de décrire l'astreinte thermique des personnes exposées et de proposer des recommandations afin d'améliorer leurs conditions de travail. Au sommaire: le froid artificiel dans l'industrie alimentaire, l'astreinte thermique, l'influence du refroidissement des mains sur la dextérité, l'évaluation des ambiances thermiques froides par les indices de contrainte, la présentation d'un indicateur d'astreinte thermique (la température cutanée du dos de la main), la pathologie due au froid et enfin recommandations (réduction de la contrainte froide, pauses, formation et information, surveillance médicale, organisation du travail, vêtements contre le froid). En conclusion, le travail au froid artificiel ne soulève pas de problèmes d'astreinte thermique ou sensorimotrice majeurs, mais certaines précautions doivent être prises</abstract>
