<abstract displayLabel="Summary">Les cuisines collectives, scolaires et hospitalières, sont en pleine évolution technique et organisationnelle avec notamment le passage de la liaison chaude à la liaison froide. Une étude ergonomique a été réalisée dans 4 cuisines , hospitalières et scolaires. Elle montre en particulier que le passage à la liaison froide diminue les manutentions de charges lourdes et fait disparaître le "coup de feu". En revanche, la division du travail entraîne une démotivation du personnel. Des recommandations concrètes sont proposées en matière d'implantation des locaux, de chix de matériels, de répartition des tâches et de formation. Les conditions de travail du personnel sont à prendre en compte, au même titre que les impératifs techniques et d'hygiène, l'ensemble de ces objectifs contribuant à la qualité des repas et du service-clients</abstract>
