<abstract displayLabel="Summary">A partir d'une enquête transversale, réalisée auprès d'une cohorte d'artisans boulangers-pâtissiers de la région Poitou-Charentes, on a tenté d'apprécier les risques broncho-pulmonaires d'origine professionnelle encourus par cette population, en comparant la prévalence de leurs symptômes respiratoires et leurs valeurs fonctionnelles respiratoires à celles d'un groupe de référence, non exposé à la farine. Cette étude transversale a permis de montrer l'importance de l'effet du tabagisme sur la fonction respiratoire, et, en dépit d'un probable effet de sélection, la potentialisation entre tabac et exposition à la farine pour altérer la fonction respiratoire</abstract>
