Sumario: The search for a better knife design for the meat packing industry is driven by two criteria: minimizing the injury and disease potential while maintaining high cutting performance. However, four major questions challenge the criteria: what components constitute a safe knife design?; what components constitute an efficient knife design?; is there any conflict between a safe knife design and an efficient knife design?; what kind of mechanism can be used to reconcile if there is a design conflict? these four questions, and the proposed methodology to answer them, are the scope of this paper
