<abstract displayLabel="Summary">Le présent article traite des pertes en eau, de leur origine, de leurs effets et plus particulièrement de ceux de la déshydratation organique sur les aspects thermophysiologiques, cardio-vasculaires et endocriniens du corps humain. A l'exclusion de tout autre aspect nutritionnel, il y est discuté de la réhydratation par voie orale et de son efficacité en fonction dy type de boisson ingérée. Des recommandations à l'usage des personnes au travail ou des conseillers sont faites sur la base des connaissances actuelles exposées dans la littérature spécialisée ou acquises par l'expérimentation scientifique telle qu'elle est conduite au Laboratoire de physiologie et de psychologie environnementales à Strasbourg (UMR 32, CNRS/INRS)</abstract>
