<abstract displayLabel="Summary">Los envases plásticos utilizados para el envasado de alimentos están constituidos por materiales poliméricos de origen no renovable (derivados del petróleo) y representan una importante fuente de generación de residuos y contaminación para el medio ambiente. En el presente estudio se han desarrollado películas plásticas obtenidas a partir de biopolímeros con el fin de obtener envases alimentarios activos y medioambientalmente sostenibles capaces de proteger al alimento de ataques microbiológicos o degradación oxidativa. Estas películas se prepararon a partir de proteínas lácteas (caseinatos) con glicerol como plastificante y un agente antimicrobiano proveniente del aceite esencial del orégano (carvacrol) como componente activo. Las películas obtenidas fueron posteriormente caracterizadas para estudiar sus principales propiedades mecánicas, térmicas y funcionales. Asimismo, se estudió su capacidad antimicrobiana y se determinó su desintegración en compost para evaluar la sostenibilidad de los envases alimentarios obtenidos</abstract>
