<abstract>El aumento de enfermedades provocadas por alimentos en los últimos años demuestra que existe una elevada necesidad de medidas de higiene en la elaboración de los alimentos. No obstante, las condiciones laborales y las medidas tomadas para la higiene de las manos constituyen un elevado esfuerzo para la piel de las personas que trabajan en este sector y pueden provocar enfermedades cutáneas laborales</abstract>
